Particularly delicate and with a great aromatic finesse, this Albert Ménès black garlic confit will take you on a journey far from the known flavors of white garlic. The black garlic, resulting from a process of maturation developed in Japan, is obtained by the fermentation of the cloves at low temperature during several tens of days. It is this controlled temperature (60-80°) as well as the high level of humidity that will allow the garlic to mature. It will thus obtain its intense and brilliant black color. The developed aromas are close to prune, with notes of caramel and balsamic, balanced by a subtle point of acidity.
